- 1 qt. cherry tomatoes (halved)
- 1 purple onion (chopped)
- 2 cans artichoke hearts (quartered, cut in half)
- 4 oz. cheese tortellini (dried, ; cooked according to package directions, I bought the 8 ounce bag of Barilla brand cheese filled tortellini and only used half)
- 5 oz. goat cheese
- 5 cups spinach (bagged, /arugula blend salad)
