- 1 Tbsp. soy sauce
- 1 tsp. ginger powder
- 1 Tbsp. red pepper flakes
- 1/2 cup dry breadcrumbs (fine)
- 1 egg (beaten)
- kosher salt
- ground white pepper
- 1/2 cup creamy peanut butter
- 1/4 hot water
- 2 Tbsp. honey
- 4 Tbsp. Sriracha hot sauce
- 1 Tbsp. rice vinegar
- 1 Tbsp. lime juice (fresh squeezed)
- 1 tsp. minced garlic (finely)
- 1 Tbsp. sesame seeds

Directions
- Finely chop water chestnuts, onion, garlic, scallions and cilantro, and stir in ground chicken in a large mixing bowl.
- Add the rice vinegar, soy sauce, ginger powder, red pepper flakes, and stir together well. Add the egg and breadcrumbs mixing meat mixture together well.
- Form the meatballs (about 16 large or 32 small) and place on the KitchenAid® Professional-Grade Nonstick Sheet Pans.

I definitely agree with the first review, I added half the amount of water chestnuts and it still might have been a bit too much. Overall so so delicious! The sauce is to die for

Overall very tasty - however, next time I will definitely use less water chestnuts. They seemed to overpower all the other ingredients and dramatically altered the texture. Also, the peanut sauce was delicious - but was WAY too much :) Would easily half it, if not a quarter...
We also used ponzu and hoisin sauce for dipping and hoisin sauce seemed to be the winner here.
I'll make again with modifications!

i was in a hurry so... had turkey meatballs pre made on hand from trader joes. cooked them per package. chopped them up fine and chopped up all other ingredients. turned this recipe into lettuce wraps with the peanut sauc. it was delicious
