It was good but something was missing. I doubled the paste and added extra curry & chili powder. Still a little bland. Maybe more ginger and garlic next time. Not sure what it needed. I also added some zucchini. I also agree that it took longer than estimated.

Needs more flavor/spice, next time would try adding more curry powder or paste. We didn’t have paste so we substituted with more powder. Probably more peppers and no broccoli next time too. Also with prep it took over an hour. Overall good though.

Very tasty. Felt very happy with results and have a wonderful pot of delicious Thai curry soup in fridge we are going to enjoy all over again today.❤️👍

Very delicious, just needs a little extra flavor. Doubling the spices and curry paste works wonders. Frozen broccoli and carrots worked well too.

I love the recipe. Next time I will use a bit more spice but otherwise so good - I used chicken thighs not breasts & for veggies, squash and bell peppers — aka what I had on hand— and it was delicious!

Excellent recipes
I added my choice of vegetable- turned out heavenly 😻
Only downside is the timing: took about 40 minutes to get done ✅

Sauce was very nice an creamy. It lacked a bit of spice for my taste. I will make it again with a touch more spice and no broccoli

came out great. I added a 1/4 cup fresh basil leaves and extra broccoli. My kids even enjoyed it. They had it over white rice. i had it over quinoa. no carrots.

Came out really well. Just added some hot green peppers and corn starch to thicken the curry. Otherwise, a solid recipe.

Flavorful and easy to make as well as full of healthy fats and veggies. This is fairly close to what I can get at my favorite Thai restaurant. Love making t his at home on a cold autumn evening. Followed the directions exactly, and used full fat coconut milk. Don’t skimp by adding low fat ingredients.
