- 3 shallots (small, peeled)
- 12 oz. rice noodles (flat, pho noodles)
- 1/2 cup fish sauce (see notes)
- 1 Tbsp. salt (plus more to taste, the original recipe calls for 2 Tbsp)

Lots of flavor. Easy directions. I used Venison (deer) sliced thinly and it cooked up perfectly. I did substitute Spinach noodles for the rice noodles and added some Zucchini matchsticks.
