Cut bacon into 1/3 instead of 1/2 - bake 350-375 (45-60 minutes) no need for toothpicks...

I have gestational diabetes, so I've been trying lots of low-carb recipes. This was a bit harder than I expected, though that could be more because I'm constantly exhausted with my pregnancy. I prepped the jalapenos while reminding myself not to touch my eyes without washing my hands, sat down to take a break, and guess what I did? Yep. I forgot I had jalapeno on my hands, touched my eye, and spent the next fifteen minutes flushing it with water.
After I recovered from that incident, I put on my old laboratory goggles from university to remind myself not to touch my eyes as I finished the recipe. It went smoothly, but my hands started getting shaky on the last few toothpicks. I gave up and just did some without toothpicks. The bacon stayed on just fine without toothpicks. My hands also got irritated from the jalapenos. My skin isn't usually this sensitive, so I recommend gloves to anyone with sensitive skin.
Anyway, these were very delicious. Husband didn't like the way the bacon fat dripped into them, but I liked them just fine.

I put foil on a baking sheet and put a rack on top but the bottom of the bacon didn’t get crispy, so I had to broil them for a few minutes AND turn them over to broil for another few minutes, but some of the cheese fell out when I flipped them over! :(
I recommend half-cooking the bacon first, letting it cool enough to handle, and then wrapping it around the peppers so you don’t have my predicament. Otherwise these are delicious!

Great recipe! For my personal taste I would add more garlic powder or maybe mash some garlic into a paste to be added it to the cheese mix.

I added shredded mozzarella instead of cheddar,mostly because i had no cheddar lol. I also added chopped green onions. It came out very tasty!
