Added Sazon Goya for more flavor for Safrito can be on the sweet side and Adobo to taste ( you must do a taste test as you add just so you get it were you like it). Instead of baking it I fried it oil till golden brown. It was a hit!! Made two dozen and wish I made four dozen for the family demolished them all. Will diffinaintly make again, especially at family events!!

Excellent and easy. FYI, leave out the sofrito and adobo and put in finely diced red and green peppers. Some canned drained mushrooms and a slice of provolone and you got a Philly Cheesesteak empanada. In Mexico you’ll find all sorts of empanadas. Fruit filled,vegetable filled and pork, chicken and beef as well.
Experiment and enjoy this wonderful street food!

This recipe is very good. Flavor is on point. A couple of tips: You will need more than one package of empanada discs for 2lbs of meat. Also, I had to up the oven temp to 400 to get them to brown. I will definitely make it again.

Wonderful! Doubled recipe, added 1 jar of sofrito sauce, 1tsp cumin, 1cup water, a head of cabbage, 2cups julienned carrots and 1small basket of mushrooms, sliced.

These turned out great went as fast as I made them... Gonna triple up next time!
Very easy and quick meal with tossed salad.
