- 1 lb. ground pork
- 1 shallots (minced)
- 2 cloves garlic (minced)
- 5 Tbsp. sugar
- 1/4 cup fish sauce
- 2 Tbsp. salt
- 1/4 cup black pepper
- 2 cups carrots (minced)
- 1 1/2 cups wood ear mushrooms (minced)
- 1 cup bean threads ((Asian cellophane noodles) minced)
- 2 Tbsp. bonito flakes
- 3 spring onions (minced)

Directions
- For the Vietnamese Sausage Patties: Combine all patty ingredients, form patties and cook through on a griddle or grill
- For the Pickled Vegetables: Combine water, vinegar, salt, and sugar in a small saucepan and bring to a simmer over low heat, letting salt and sugar dissolve. Pour over vegetables and reserve
