  • 4 Tbsp. vinegar (a cider vinegar is normal, but I use “malt” vinegar which gives a lovely tang and a bit more “depth” of flavour)
  • 100 mL ketchup (or the tinned pureed tinned tomatoes available at all decent supermarkets)
  • 100 mL water
  • 3 Tbsp. sugar (I prefer to use brown sugar)
  • 1 tsp. salt
  • 1 tsp. chilli powder (I actually use 1.5 teaspoons for extra kick)
