Preheat the oven to 450°F.

Lightly coat a baking sheet with oil. Set aside.

Separate the cauliflower into florets 1 1/2 to 2 inches wide, but include any smaller pieces, as well.

Combine the oil, nutritional yeast, and seasonings in a large bowl and stir until well combined. Add cauliflower and toss to coat evenly.
PRO TIP Nutritional yeast adds body to the coating and gives these bites an almost meaty flavor. Buy it at natural foods grocery stores and online.

Arrange the cauliflower in a single layer on the prepared baking sheet.

Bake the cauliflower on middle rack of oven until well browned in spots and tender-crisp (check with a fork), about 15 minutes. While the cauliflower bakes, make the sauce.

Place the hot sauce and melted butter in a large bowl and stir to combine. Set aside.
PRO TIP No need to wash the bowl you used for the cauliflower.

Check to see that cauliflower is done. Remove from oven or add time as needed.

Add the hot cauliflower to the sauce mixture and toss to coat.

Transfer cauliflower to a platter. Serve immediately with blue cheese dressing and celery sticks.
