I made a keto version of this. Skipped the roux part (butter + flour) and heated 1 cup of milk, 1 cup of heavy cream with the seasoning, then melted the cheese in it. It was delicious and the kids gobbled it up and asked for seconds!

I recommend getting two heads of cauliflower for this recipe or cutting everything else in half. It was too cheesy and saucy for me. That said the flavor is definitely there, but for a three pan dish it was somewhat messy and was only okay.

I made this for romantic dinner around Valentine's Day and my husband LOVED it! I adore sharp cheddar so this was a no brainer for me! I can't wait to make this again when we have people over so I don't eat it all by myself

This was really yummy. When I make it again I will cut the sauce in half if using just one head of cauliflower. The sauce was absolutely delicious but there was so much of it it was like soup in the end, albeit delicious soup. I will also only parboil the cauliflower for 5 minutes because I like it to have a little firmer texture. I used extra sharp Vermont white cheddar. Very delicious recipe!

I didn't have enough cauliflower so I added peas and beans, I probably didn't enough veggies so it was very saucy other wise it was great
