Description
This recipe is the best of all worlds, a cross between a tasty chicken Caesar and a homey pasta salad. It's perfect for a casual dinner or potluck, though toss with the lettuce close to serving so it stays crisp. The fresh and creamy Caesar dressing is very easy to make and definitely elevates the recipe. For the most beautiful salad, look for deep green romaine. The recipe, which makes 12 cups, is a Yummly original created by Katie Workman.

- 12 oz. penne pasta
- 1/2 cup finely grated Parmesan cheese (4 oz.)
- 1/3 cup mayonnaise
- 3 Tbsp. extra-virgin olive oil
- 1 1/2 Tbsp. fresh lemon juice
- 1 Tbsp. Dijon mustard
- 2 tsp. Worcestershire sauce
- 1/2 tsp. minced garlic
- 1 anchovy fillet (minced, or 1 tsp. anchovy paste; double for extra flavor)
- 1/4 tsp. salt (plus more to taste)
- 1/4 tsp. freshly ground black pepper (plus more to taste)
- 3 cups cooked chicken (from a rotisserie chicken, torn into bite-size pieces)
- 1/2 cup red onion (chopped)
- 6 cups romaine lettuce (torn into bite-size pieces)

Directions
- Bring a pot of water to a boil and cook pasta according to package directions. Drain pasta, rinse with cool water, and drain again. Meanwhile, continue with recipe.
- Make Caesar dressing: In a large bowl, whisk together Parmesan, mayonnaise, olive oil, lemon juice, mustard, Worcestershire, garlic, anchovy, and 1/4 tsp. each salt and pepper. Taste and add more salt and pepper if you like. Scoop out 1/4 cup dressing and set aside.
- Transfer drained pasta to bowl with remaining dressing and toss with chicken and onion. Just before serving, toss salad with lettuce and as much additional dressing as you like. Sprinkle salad generously with more pepper.
