Description
Rotisserie chicken makes this crowd-pleasing salad come together in a snap. Serve it over mixed greens, tucked into a sliced croissant, or with your favorite sandwich bread. A touch of honey makes the dressing slightly sweet, but you can leave it out if you prefer a more savory salad. If you don’t have toasted almonds on hand, cook them in a small pan over medium heat, stirring frequently until they’re golden. The recipe, which makes 5 cups, is a Yummly original created by Ashley Strickland Freeman.
Ingredients
- 2/3 cup mayonnaise
- 1/4 cup fresh flat-leaf parsley (chopped)
- 2 tsp. Dijon mustard
- 2 tsp. honey (optional; or use sugar)
- 2 tsp. white wine vinegar
- 2 stalks celery
- 1 cup seedless red grapes
- 3 cups cooked chicken (shredded, skinned)
- 1/2 cup toasted sliced almonds
- 1/2 tsp. salt (plus more to taste)
- 1/2 tsp. black pepper (plus more to taste)
- mixed salad greens
- vinaigrette dressing (your favorite)
Directions
- Whisk together mayonnaise, parsley, mustard, honey, and vinegar in a medium bowl.
- Finely chop celery and cut grapes in half. Add them to mayonnaise mixture along with chicken, almonds, salt, and pepper, and stir to blend. Season to taste with more salt and pepper if you like. If you’re not serving the salad right away, chill it, covered, up to 2 days.
- Arrange mixed greens on serving plates and drizzle with vinaigrette. Top with a scoop of chicken salad.
