- 1 1/2 lb. boneless, skinless chicken breasts (when raw)
- 2 large carrots (peeled)
- 1 cup sweet peppers (diced tricolor)
- oil (as needed to prevent sticking)
- 4 cloves garlic (fresh, chopped)
- 1 medium zucchini (diced)
- 1 can fire-roasted diced tomatoes
- 1 can diced tomatoes (regular)
- 1/2 tsp. chipotles in adobo (blended)
- 1 jalapeno pepper (medium, deseeded, optional if you like things hotter)
- 5 1/2 cups chicken broth (or sub 1 c for beer)
- 1/4 cup dried quinoa
- 1 can mild green chilis
- 2 tsp. ground cumin
- 1 tsp. dried oregano (preferably Mexican oregano)
- 1 tsp. ground cloves
- 3 Tbsp. chili powder (I use Whole Foods bulk)
- 10 oz. sweet corn
- 1 tsp. salt
- freshly ground black pepper (to taste)
- 2 tsp. lemon juice
- 1/4 cup fresh cilantro (washed and chopped)
- sour cream (or Greek yogurt)
- 1 strip tortillas
- guacamole

Easy to follow recipe. I used my crockpot instead of making it on the stovetop. My family enjoyed it!

This is amazing!!! I tried it without the adobo peppers but I'm sure it would be fabulous w/it. I also added more cilantro, which I recommend
