  • 1/2 hothouse cucumber (or 1 regular cucumber, peeled and seeded)
  • 2 1/2 cloves garlic (pressed through a garlic press, or finely minced)
  • 1 tsp. red wine vinegar
  • salt (and pepper)
  • fresh lemon juice (Squeeze of)
  • extra virgin olive oil
  • 4 cloves garlic (smashed)
  • 1 lemon
  • 2 tsp. red wine vinegar
  • 2 Tbsp. extra virgin olive oil
  • 2 Tbsp. plain yogurt
  • 1 Tbsp. dried oregano
  • salt (and pepper)
  • 1 1/4 lb. boneless, skinless chicken breasts (cubed, I left them whole, cooked them on my outdoor grill, then cut the into strips)
  • bread (Soft Wrap, recipe I post yesterday, or pita bread)
  • fresh tomatoes (seeded and diced)
  • red onion (sliced thin, I grilled mine with the chicken)
