These turned out great! Once cooled I dipped the bottoms in dark chocolate!

I bake for a university cafeteria, made 80 of these and they came out beautiful. Melted chocolate and used a piping bag to decorate them, the chocolate was a nice touch. Everyone loved them! These will definitely be made again.

Baked for 16 minutes instead of 25 and got the pictured result. Taste is really good. Lightly sweet. Slightly sticky. Crumbled apart when bit into. Made 24, rather than 20. Made them bigger the 2nd batch so it would use all the coconut mixture. Personally, I would like some chocolate on them, but they're good as is.

I let the combination of ingredients whip into a meringue before adding the coconut and they came out beautiful! Will definitely make again, maybe this week since they won’t last very long with all the family smackers!
