Description
This thick flatbread is wonderful cut into chunks and eaten out of hand. Or you can split slabs of it horizontally for the Italian sandwich bread of your dreams. Master this basic recipe, then try adding other toppings you love, such as fresh grapes, or onions and marinated artichokes. Note that the recipe calls for a 10- by 15-inch rimmed baking sheet (aka a jelly roll pan), but if you don’t have one, you can use a 9- by 13-inch baking dish. The recipe is a Yummly original created by Tracey Seaman.
Ingredients
- 2 cups water
- 5 Tbsp. fresh rosemary (leaves, or a bit less to taste, divided)
- 4 1/2 cups all-purpose flour (plus up to ½ cup more for kneading)
- 1 packet instant yeast (1/4 oz., or 2 1/4 teaspoons, also called rapid-rise or bread yeast)
- 1 tsp. fine sea salt (for dough; or use table salt)
- 6 Tbsp. extra-virgin olive oil (or a bit more, divided)
- 1/2 tsp. coarse sea salt (for sprinkling)
Directions
- Combine water and 3 tablespoons rosemary in a small saucepan and steep over medium-low heat until mixture begins to simmer. Remove from heat, insert an instant-read thermometer, and let stand until mixture cools to 120°F. Pro tip: To hasten cooling, dip saucepan in a larger bowl of cold water without immersing it. At 110° to 120°F, the liquid will be the right temperature to activate the instant yeast. If too cool, the yeast might not activate, and if too hot, the yeast will be destroyed.
- Combine 4 1/2 cups flour, the yeast, and fine sea salt in a stand mixer bowl or large mixing bowl. Mix with the paddle attachment at low speed, or stir with a wooden spoon to blend.
- Strain rosemary water into the dough and discard rosemary. Add 2 tablespoons olive oil. Mix at low speed or stir until a shaggy dough comes together.
