Classic Turkey Gravy with Fresh Sage
Spoon all of the fat from the turkey drippings, and set aside 5 tablespoons in a small bowl. Discard any remaining fat. (If there was not 5 tablespoons of fat from the drippings, add enough unsalted butter to reach the full amount). Measure the defatted turkey drippings and if needed, add enough chicken broth to equal 3 1/2 cups.
PRO TIP To easily separate the fat from the rest of the drippings in a turkey roasting pan, pour all the liquid into a 1 qt. glass measuring cup. The clear fat will rise to the top in a layer.

Finely chop the shallots.

Heat the reserved fat in a large saucepan over medium heat. Add the shallots and sage and cook, stirring occasionally, until slightly softened, 2-3 minutes. Reduce the heat if shallots start to brown.
PRO TIP If you love fresh sage, feel free to double the amount.

Add the flour and cook, stirring, for 2 minutes. While stirring, pour in the turkey drippings (and chicken broth, if used). Bring mixture to a boil, stirring constantly, and cook until slightly thickened, 2-3 minutes.
