Colombian Salpicón de Frutas (Watermelon and Fresh Fruit Cocktail)

Salpicón is a refreshing and delicious Colombian fruit cocktail that’s popular as a dessert or afternoon snack. While some versions of salpicón include the addition of soda, ice cream, or sweetened condensed milk, this easy and healthy version is made with only fresh fruit and juice. You can use different fruits depending on your taste, and replace the watermelon juice with strawberry juice if you prefer. To save time on prep, feel free to buy fresh cut-up pineapple and other fruits at the market. All the fruits and the juice can be prepped in advance, but peel and slice the banana right before serving to keep it from browning. The recipe is a Yummly original created by Erica Dinho.
Ingredients
- 4 cups seedless watermelon (cut in 1-inch pieces)
- 3 cups cold water
- 1 cup fresh pineapple (cut in 1/2 to 1-inch dice)
- 1 cup mango (ripe, cut in 1/2 to 1-inch dice)
- 1 cup strawberries (sliced)
- 1 cup grapes (seedless, red or green, cut in half if large)
- 1 cup papaya (cut in 1/2 to 1-inch dice)
- 1 small banana
Directions
- Puree watermelon and water in a blender until very smooth. Pour watermelon juice through a fine strainer into a pitcher or large bowl. You should have 4 cups.
- Add the pineapple, mango, strawberries, grapes, and papaya and stir well. Continue with the recipe, or chill for about 20 minutes or longer if you prefer the salpicón cold (it will be extra refreshing).
- Just before serving, slice the banana and stir it in. Pour the salpicón into tall glasses and serve with spoons.
