- 2 cups red wine (preferably Burgundy, Côtes du Rhône, or pinot noir)
- 2 cups homemade chicken stock (or beef stock, preferably brown chicken stock, see headnote above)
- 2 garlic cloves (mashed or minced)
- 1 Tbsp. tomato paste (store-bought or homemade)
- 3/4 lb. fresh mushrooms (trimmed, rinsed, and quartered)
