    Made it was pretty good added a jalapeño for a little heat; a little to much heat lol but it was still good

    This is very similar to a recipe called "Cookhouse Eggs" (?) in a Marlboro cookbook I used to have. I personally prefer to add an onion and use russet or yukon instead of red potatoes. And Ive added (or substituted for bacon) sausage,or ham, or diced steak - or even hamburger once in a pinch. Very good recipe.

    I made it this morning, absolutely delicious! Question- why red potatoes? Do they taste different? They’re a little hard to find in South Africa. I’ll hunt for them if they make this dish any more incredible than it was with regular potatoes

    Good meal. I cut the portion since I was feeding only myself, so two eggs, one diced potato, 3 pieces of bacon, and just a little bit of green pepper chunks. I’m happy with it. I’m going to use the remaining ingredients for the next few days breakfast

    Made this for Fathers Day Breakfast. It was a hit. I used chives, garlic and a hint of Adobe seasoning to give it something a little extra and served avocados on the side. Thank you for sharing!!!
