Warm spiced carrot cake muffins baked with a cheesecake surprise in the center. The recipe is a Yummly original created by Sara Mellas.

- 3 medium carrots (about 1 1/3 cups grated)
- 0.75 oz. finely chopped walnuts (3/4 oz. is about 3 Tbsp., optional)
- 1/2 cup canola oil
- 1/2 cup light brown sugar (packed)
- 1/3 cup granulated sugar (for cake)
- 2 large eggs
- 1/3 cup unsweetened apple sauce
- 1 tsp. vanilla extract (for cake)
- 1 1/2 cups all purpose flour
- 1 1/2 tsp. pumpkin pie spice
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt (scant)
- 1/4 cup raisins
- 4 oz. cream cheese (softened)
- 2 Tbsp. granulated sugar (for filling)
- 1/2 tsp. vanilla extract (for filling)
- 1 egg yolk

Directions
- Preheat the oven to 425°F.
- Line a 12-cavity muffin pan with muffin/cupcake liners.
- Grate the carrots and finely chop the walnuts.
