Awesome soup. Was a hit with everyone.
Yummly User a year ago
Absolutely a hit! I added jalapeño for a kick. Cannot wait to make it again. It is going in the rotation

This soup was great! I was a little skeptical at first because it seems too simple but the creaminess was perfect and the balance between ingredients was great. I did think it needed a kick so added jalapeños. When I make this again I will probably add more peppers to the soup while it’s cooking and also probably some green chiles.

10/10 fantastic
I added a can of corn and a can of black beans, which in turn made me add more broth and seasonings.
Will absolutely be making again!

Amazing soup! I added a jalapeño and a poblano pepper, as well as some Cayenne pepper, smoked paprika, and cumin. It was a hit!!

DELICIOUS! I didn’t have Rotel tomatoes do I just used regular canned tomatoes and added jalapeños from a jar and poured in the jalapeño juice to make up for not having Rotel tomatoes. Husband loved the meal!

This was awesome. Quickish and easy. I will make again for sur. Things to add to shopping cart or should be noted: only need cream cheese or heavy whipping cream. Not both. Cilantro, lime, avocado, sourcream, cheese and/or jalapenos are good additions. I am going to try different variations of this with ground turkey or chicken. Maybe shredded chicken too!

This was super easy to make and it tastes fantastic! I doubled the recipe and used both cream cheese and the heavy cream plus added an Anaheim pepper for a little kick! Will definitely make it again!

This was awesome! I add some personal touches but the basic recipe is really good. It's a definite do over.

Really good! Used cream cheese instead of cream. Left out peppers. Would make again.

I doubled the recipe to feed my family. I browned meat and put all ingredients into crock pot for 6 hours. Served with taquitos. I used the cilantro and lime for garnish and topped with southwestern tortilla strips. This meal was a big hit. I just baked the frozen taquitos and the opened the crock pot and we were ready to eat.
Definitely will serve again.

5 stars for being so easy! Tastes great too. Very forgiving when vegan meat substitute was used and added black beans.

I made this with Quorn mince and it was amazing. So quick and easy. This will probably from now on be a staple for when i'm lazy and hungry in the future.
Only things i changed were:
1. Fried the onion for a few minutes before the mince
2. Added the green capsicum at the same time as the mince
3. Added the garlic at the same time as the canned tomatoes

Geesh, I don’t know why I haven’t had all this good food before I started keto. This recipe was amazing and I did have fresh chopped cilantro, lime, avocado, jalapeños and shredded cheese on the side as well as almond flour tortillas. I warmed the tortillas REALLY well to make them a little stiffer than for a taco and cut them into small triangles to eat with the soup. Delicious!😋

Very delicious recipe. I added black beans and corn, just a personal preference but other than than that followed the recipe exactly as is. Definitely will make again.
