- 2 Tbsp. olive oil (divided)
- 2 leeks (large, cleaned, trimmed, and diced)
- 6 garlic cloves (minced)
- 20 oz. mixed mushrooms (~560g of)
- 1 tsp. dried thyme (or 1 tablespoons fresh thyme leaves, minced)
- 1 tsp. kosher salt (divided + more to taste)
- 1 1/2 cups low sodium vegetable broth (~355mL, or water)
- 2 Tbsp. tamari (gluten-free soy sauce or soy sauce)
- 1 Tbsp. vegan Worcestershire sauce (optional, I use this brand)
- 1/4 cup all purpose flour (~30g, or gluten-free all-purpose flour or 2 tablespoons cornstarch)
- 1/2 cup dry white wine (~120mL, such as Pinot Grigio or Sauvignon Blanc)
- 1 full fat coconut milk (13.5-ounce, ~400mL can of)
- 2 Tbsp. Tahini
- 2 Tbsp. nutritional yeast
- 1 tsp. paprika (it will give the sauce a slightly red color)
- 1/2 tsp. Dijon mustard (or coarse-grain mustard)
- 12 oz. pasta (~280g-340g, choice, can use gluten-free pasta, bean-based pasta, etc.**)

- vegan Parmesan cheese (optional)

Ummm…. Probably the best vegan meal I’ve ever made. Nope, make that any meal! I followed this recipe exactly and OMG I’m in heaven!!! The flavors match so well together - it’s fabulous. And I cook a LOT of things. Thank you so much for giving me a go to recipe that I can treat all my friends and family with! And not just the vegans! ❤️😊❤️

This was amazing. I’m not a huge fan of mushrooms, but wow. As with most pasta dishes, even better the next day.

I grew up on my mom’s beef stroganoff growing up. Since going plant based, I’ve been looking for something to replace it, but I have to admit I had zero confidence. This recipe has a lot of ingredients and takes a bit of time to prepare. But it is worth the effort. My husband and I love this dish. It has the most heavenly flavor...I might even prefer it over mom’s. Sorry mom. I have to keep this recipe on rotation since my husband requests it all the time.
