- 2 3/4 cups water
- 2/3 cup quick cooking grits
- 2 Tbsp. heavy cream
- 2 Tbsp. unsalted butter
- 4 oz. sharp white cheddar cheese (grated)
- 1 tsp. kosher salt (or more to taste)
- 1 pinch white pepper
- 2 Tbsp. vegetable oil
- 1/4 cup green bell pepper (diced)
- 1/4 cup red bell pepper (diced)
- 3 scallions (white and green parts, thinly sliced)
- 2 garlic cloves (minced)
- 2 tsp. creole spice mix (see above)
- 1 1/2 lb. shrimp (medium, 26/30 count, peeled and deveined)
- 1 cup sauce (Creole)
- 1/4 cup heavy cream
- 2 Tbsp. unsalted butter
- 5 oz. baby spinach leaves (or frozen spinach)
- 2 tsp. fresh lemon juice
