Preheat the oven to 425°F.

Set a wire rack in a baking sheet and coat lightly with the oil.

Pat the chicken wings with paper towels until they are completely dry. Season generously with the salt and pepper and dust with flour, shaking off any excess. Arrange the wings on the prepared rack so they are not touching.
PRO TIP Baking chicken on a rack helps the skin to get crisp.

Bake the chicken wings on middle rack of oven until browned, crisp, and cooked through, 45-50 minutes.

While the wings bake, finely grate the ginger and place in a small bowl. Add the honey, chili-garlic sauce, hoisin, and soy sauce and stir to blend. Thinly slice the scallions and set aside.
PRO TIP Using lite soy sauce helps keep the wings from being too salty, since the chicken is seasoned with salt and the chili-garlic sauce and hoisin both contain sodium.

Check to see that wings are done. Remove from oven or add time as needed.

Brush the wings with some of the sauce. Arrange wings on a platter, sprinkle with reserved scallions, and serve with the remaining sauce on the side.
