Cumin-Roasted Cassava with Avocado Sauce

Cassava (yuca) is a very important ingredient in Colombian cuisine and is used in many ways, comparable to how potatoes are used in the United States. Crispy on the outside and fluffy on the inside, this roasted cassava is a delicious side dish for any protein, and it can also be served as an appetizer or snack. The cumin and other savory seasonings add extra flavor, but it’s a flexible recipe, so feel free to experiment with other herbs and spices — and feel free to double the quantities. Look for frozen cassava at well-stocked grocery stores and Latin markets. Or buy fresh cassava and then cut off the bark-like peel with a sharp knife, and cut the root into pieces. Ingredients
- salt (optional)
- 10 oz. frozen cassava (yuca)
- 3/4 tsp. dried parsley
- 3/4 tsp. onion powder
- 3/4 tsp. garlic powder
- 3/4 tsp. ground cumin
- 1/4 tsp. black pepper (plus more to taste)
- cooking oil spray
- 1/2 avocado (medium, peeled and cut into pieces)
- 1 Tbsp. lime juice
- 1 scallion (chopped)
Directions
- Bring a large pot of salted water to a boil. Preheat the oven to 400°F.
- Add cassava to the water, cover, and return to a boil. Reduce heat and simmer until cassava is just tender when pierced with a fork, 10-15 minutes. Drain and set aside.
- Once the cassava is cool enough to handle, use your fingers to remove the fibrous core from any pieces that were already split open. (For remaining pieces, remove the core at serving time.)
