Description
For a light and flavorful meal, try salmon burgers zipped up with curry seasonings on a bed of greens in lieu of the usual buns. Salmon (in this case, less-expensive canned salmon) provides a generous serving of heart-healthy omega-3s. The burgers cook up quickly, making for an easy lunch or dinner. The recipe is a Yummly original created by Rima Kleiner, MS, RDN.

- 1/2 cup old-fashioned oats
- 12 oz. canned salmon (or salmon in pouches, drained)
- 2 large eggs
- 1 1/4 tsp. curry powder (divided)
- 1 tsp. black pepper (divided)
- 1/2 tsp. Dijon mustard
- 1/4 tsp. paprika
- 1/4 tsp. turmeric (or more curry powder)
- 1/4 tsp. garlic powder
- 1/4 tsp. salt (plus 1/8 tsp. for dressing and more to taste)
- 3 Tbsp. olive oil (divided)
- 1/2 red bell pepper
- 1 avocado (firm-ripe)
- 5 cups mixed salad greens (loosely packed)

Directions
- Whirl oats in a food processor until finely ground. Add salmon (break up large chunks with a fork), eggs, 1 tsp. curry powder, 3/4 tsp. pepper, the mustard, paprika, turmeric, garlic powder, and 1/4 tsp. salt. Pulse to combine.
- Spoon 4 portions of salmon mixture onto a plate. Pat out each into a cake about 1/2 inch thick and 3 inches wide. Cover and freeze for 10 minutes. (This helps the oats absorb the moisture and helps the burgers hold their shape.)
- While patties are chilling, in a large bowl, stir together 1 Tbsp. olive oil, 1/8 tsp. salt, and remaining 1/4 tsp. each pepper and curry powder; set dressing aside.

The flavors are great and the recipe was super easy to make after work also loved the flavors of the dressing!
