  • 1 onion (large, thinly sliced)
  • 1/4 cup white wine vinegar (or red)
  • 1/4 cup chicken stock (or white wine)
  • 1 can tomato paste
  • 3 Tbsp. brown sugar
  • 3 Tbsp. olive oil
  • 3 Tbsp. garlic (minced fresh)
  • 1/2 cup pitted kalamata olives (chopped)
  • 5 pitted dates (large, chopped)
  • 2 Tbsp. fresh oregano (or 1-2 teaspoons dried)

  • 2 zucchini (cut into 1/2″ rounds)
  • 6 whole Roma tomatoes
  • fresh parsley (for garnish, optional)
  • 2 1/2 lb. frozen peaches (or fresh)
  • 4 cups frozen berries (or fresh, I used strawberries and blueberries)
  • 1 cup sugar (use a little less if your fruit is really sweet)
  • 1/4 cup cornstarch
  • 1 pinch salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup corn meal (stone ground, coarse or fine)
  • 1/4 cup dry milk powder (omit if you use fresh milk instead of water)
  • 4 Tbsp. sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 8 Tbsp. butter (cold, cut into 8 pieces)
  • 1 1/2 cups cold water (or milk, omit dry milk powder if using fresh milk)
