Preheat the oven to 400°F.

Line two baking sheets with parchment paper. Set aside.

Remove stems from the collard greens and cut leaves into 1.5-inch pieces. Place approximately 4 cups of leaves in a large mixing bowl.

Drizzle the olive oil over leaves and toss to coat. Arrange the leaves in an even layer on the baking sheets, spreading them out as much as possible. Sprinkle the salt evenly over the leaves.
PRO TIP Avoid letting the leaves overlap to optimize for crispy chips!

Bake the collard chips on middle and lower-middle racks of oven until browned and crispy, 11-15 minutes. Keep a close eye on the chips toward end of cooking to avoid burning.

Check to see that collard chips are done. Remove from oven or add time as needed.

Season the collard chips liberally with salt. Serve immediately.
