Followed the recipe exactly. Absolutely delicious! This rice was so flavorful! I think I could just make the rice as a great side dish for other meals. Not sure why others did not see that the instructions specifically call for jasmine or bismati rice. Wouldn’t think from that to ever substitute brown rice. I used white long grain rice, rinsed and drained per the instructions. Really a good dinner. The chicken thighs were very moist.

Rice did not cook all the way - not sure how the original author got hers to cook with just that time frame she recommended… ended up putting in more water and cooking for longer but chicken was bomb though. Would go well with rosemary, mushrooms, and shredded cheese I feel. I also added shallots and Mexican oregano to this dish, and omitted the bacon.

It was very good. Could have cut the time uncovered to 10 minutes. A little dry.

Absolutely delicious flavor, but TWO HOURS in the oven still didn’t cook the rice all the way through. Will definitely cook the rice before making this casserole again. I did try the extra liquid like other comments said, too.

Came out great but U did change my recipe just a little aftee seeing the hard rice comments. I added one piece of thigh, then added 2 cups of rice instead of a 1½ cup. Next i put in 3 cups of chicken broth and added 3 different cheese. Oh and the second baking cycle i cooked it for 30 minutes instead of 20 minutes.The only rice that was a little hard was the bits not covered with the cheese. Was a hit with me and the family.

It turned out GREAT! Others mentioned the rice didn’t cook all the way, so I cooked it on the stovetop in a cast iron pan with all the bacon, onions, etc. When adding the chicken broth, I added an extra 1/2 cup of water & cooked It on the stovetop for about 10 mins. Then, I put the chicken on top. Added a cheese blend & popped it in the oven. 30 mins covered; 20 uncovered & 2 mins broil.

Its good. Just the rice didn't cook all the way. it need an extra 25mins with about 1 and a half cup of water.

A delicious easy to make supper with lots of flavour. I would have cooked the rice a bit longer as there was still some crunchy pieces.
