Loved this… it was so quick and easy I even made it on a week night. Super good flavor for a simple way to make it! I did add fresh jalapeños to it also and did a combo of red & orange bell peppers.

It was outstanding! My hubs said he wished he would’ve had some cornbread to go with it. I’ll have to whip some up next time. Only complaint was I didn’t see the use of the blender coming, but it was definitely the right thing and made it the perfect texture/thickness. Gorgeous and delicious!

I followed the recipe exactly and it came out perfect. I topped our bowls with the toasted tortilla strips I made from this recipe, a small amount of sour cream, a sprinkling of cheddar Jack cheese and a squeeze of fresh lime.
My family loved it!
I wouldnt change a thing!

Yummly Awesome!!! I cut the recipe in half and used Rotel fire roasted diced tomatoes and green chilies. I didn’t add the cheese to the soup but added it as a garnish, along with avocado and the tortilla strips. Used rotisserie chicken (thighs and legs — that’s what I had in the freezer) but I bet it’s awesome with the breast. Deliciousness!!! So happy I used this recipe with the corn tortillas adding the creamy consistency instead of the recipe that uses cream— much less fat (fewer WW points)!

Not bad at all! Seared a couple of chick breasts with a little cumino and a very little bit of gebhardts chili powder. Sautéed the vegs in the chicken scrappings and some broth. Then followed the recipe pretty close to the original. I did use rotel tomatoes instead of plain,
