- 2 bags cauliflower rice (I get mine from Trader Joe’s, microwaved for 10 minutes, stirred, and then another 10 minutes.)
- 1 can cream of mushroom soup
- 2 1/2 cups shredded cheese (cheddar or colby jack work perfectly)
- 5 cups cooked chicken (chopped, or turkey)
- 1/2 cup peas
- 1 tsp. black pepper
- 1/2 tsp. salt (more if you like, so taste before baking)
- 14 oz. mushrooms (cans of, one if you’re not a huge fan)

This was easy and delicious! I substituted chopped zucchini because I didn't have cauliflower rice. Very good.
