2 SERVINGS
- 2 pork chops
- 2 sweet potatoes (peeled and cut into chunks)
- 1 red onion (organic, cut into wedges)
- 1 garlic bulb (organic, broken into unpeeled cloves)
- 2 bay leaves (Waitrose Organic Dried)
- 150 mL cider (Duchy Originals from Waitrose Organic Herefordshire Reserve Dry)
- 2 Tbsp. chutney (Duchy Originals from Waitrose Organic Harvest)
- broccoli (Organic, or pointed cabbage, steamed, to serve)

Directions
- Preheat the oven to 190ºC, gas mark 5. Place the pork chops in a small ovenproof dish with the sweet potatoes, red onion, garlic cloves and bay leaves.
- Pour over the cider, cover with foil and bake for 20 minutes. Remove the foil and bake for a further 30 minutes, until the pork is nicely browned and completely cooked through with no pink meat.
- Using a slotted spoon, lift the pork and vegetables onto 2 plates. Stir the chutney into the pan juices, spoon onto the plates and serve with steamed cabbage or broccoli. Enjoy with a glass of the remaining cider.
