I had to add a lot of pepper. The coconut milk gave it almost a sour taste.

This was super easy and came out so good! I put some jasmine rice in the bowl before the soup because my kiddos like something to chew on and it was so delicious! I loved it

I have made this at least 10 times! It’s so delicious! I’ve tried it with other plant based milks and it does ok…but the coconut milk just makes it…mmmmm.!

Delicious. I didn’t have cilantro, ginger or cayenne, but was still dying to make it, so I added a Tom yum soup mix. I’m sure it made it a little different, but goooood!

I used this as my base for the soup. I sliced the carrots thinly and did not puree them. I like things in my soup and not have a broth. I added a heaping tablespoon of red curry paste. It could of used some more, but had to make sure it was edible for everyone. The author thought ginger could be too spicy. My mother Norwegen mother in law thinks pepper is too spicy. I guess to each one their own palate. I don't think it would have tasted good without it. Added a little peanut butter (this is what is added in traditional red thai curry). It was absolutely delicious and I will make it a thousand more times.

I used cayenne powder and Squeezed lime juice in it and fresh cilantro. Followed the recipe... very very good

I can’t believe how easy this was! Absolutely delicious, better than a Thai restaurant! I added cooked chicken to mine and will try shrimp next time. This is a keeper!
P.S. I added cayenne pepper to mine and it was plenty hot enough🤗
