Instead of beef stock, I boiled ginger, star anise (cinnamon if you're limited), 5 garlic cloves, and beef necks to get the broth. best way I've made Pho.

Amazing ! Be careful with the ginger. It can easily over power the both . I added jalapeño & Tofo . The jalapeño is definitely needed for more flavor

I'd make it again! Used Chinese five spice instead of the star anise. Turned it pretty good.
