- scampi (handful of good frozen whole tail)
- 3 leaves iceberg lettuce
- sliced cucumber
- 2 slices bread (don’t go posh here, go for a squishy one rather than crusty one)
- sauce (tartare, see below)
- 2 Tbsp. mayonnaise
- 10 cornichons (chopped)
- 1 Tbsp. capers (mini, the larger ones are too vinegary)
- 1/2 lemon
- 1 handful chopped parsley
- 1/2 diced shallot (a finely, I love onion in sandwiches)
- 1 tsp. Dijon mustard
- 1 tsp. garlic (infused creamed horseradish, from The Garlic Farm)
- freshly ground black pepper
- 1 pinch smoked sea salt (to taste)
