Good brunch dish. Next time I’ll add some herbs and lemon to the quinoa. Also, do cooking out of the order she presents. Start quinoa, then potatoes, then tofu scramble, otherwise tofu is done and getting cold while waiting on the potatoes.

We rather liked it. Be sure to really get the water out of the tofu to aid flavor absorption. I will add jalapeño to the tofu mix next time.
I made this a second time and I would suggest double the spice amounts.
