- 1 lb. lean ground beef (I used 90/10 ground sirloin)
- 1 1/2 cups dried pinto beans (or fresh hulled, but NOT canned in instant pot)
- 1 cup yellow onion (chopped sweet)
- 1/4 cup pepper (chopped, like poblano or serrano pepper or can sub a milder bell pepper)
- 2 cups root vegetables (ssorted chopped, like carrots, parsnip, beets, etc.)
- 1 sweet potato (medium, chopped or spiralized about a 5" long sweet potato)
- 8 cups low sodium beef broth
- 3 Tbsp. worcestershire sauce
- 1 tsp. black pepper
- 1 tsp. canned chickpeas (rinsed, dried and “skinned”, divided)
- 4 cups chopped kale (cored)

This recipe has some errors in it, but it was really good! Here are my fixes and tweaks. I used 1 cup of dried pintos, but it could have used 1.5 cups. Don’t use chickpeas if the recipe shows that, the authors said it was a mistake. There was no measurement for garlic so I used 1.5 tsp. of pre-minced. There was no measurement for Thyme so I used 0.5 tsp. I used pre-chopped stew beef and it was fantastic. I used Orrington Farms Broth Base & Seasoning, Beef Flavored for the broth.
