Description
These beefy, cheesy, toasted sandwiches hit every button for what a French dip should be. Start with tender leftover meat and flavorful broth from Triple-Duty Instant Pot Pot Roast. Serve the hot broth in little bowls for dipping the melty cheese and beef sandwiches. The recipe is a Yummly original created by Ashley Strickland Freeman.

- 2 cups pot roast (cooked, leftover from Triple-Duty Instant Pot Pot Roast, broken into bite-size chunks)
- 3 cups beef broth (leftover from Triple-Duty Instant Pot Pot Roast)
- 1/4 cup chopped fresh parsley
- 4 hoagie rolls (or French sandwich rolls, split)
- 1/4 cup salted butter (softened)
- 8 slices provolone cheese (4 ½ in. square, ½ lb. total))
- prepared horseradish (optional, for serving)

Directions
- Preheat oven broiler with a rack set about 3 inches from the heat, or preheat a toaster oven on the top broil or toast setting.
- Combine pot roast and broth in a medium saucepan over medium heat. Heat until hot but not boiling, stirring occasionally, about 4 minutes. Stir in parsley.
- Set hoagie rolls on a sheet pan with cut sides up and broil until golden, 1-2 minutes. (If using toaster oven, toast 2 rolls at a time.) Spread cut sides with butter. Set tops of sandwiches aside on a plate.
