Easy and delicious! I will be making this all summer! I used 2 cans of organic diced tomatoes. I chopped everything very fine and did not use the blender cause I had the time to chop.
I did add 2 tablespoons of hot pico de gallo because I only had one jalapeño.
I just returned from Spain and I think this easy recipe compares to the gazpacho I had there. So glad I tried it!
