We really liked it. I used the instant pot to cook the cauliflower and it came out great at 2 min. I thought there could have been more sauce. I too used Panko and added chopped walnuts for a little more protein. Will make again.

I really liked this. I think you need a huge head of cauliflower to accommodate the amount of cheese sauce so when I make it again I will probably cut the sauce in half. I seasoned the cauliflower with garlic powder and pepper and roasted it for about 10 minutes. I also used Panko for a really crunchy crumb crust. Yum.
