It was very healthy and filling. It’s very fresh and full of nutritious vegetables. Good for eating in the evening because it’s not super heavy but it’s filling. We served it on a bed of mixed greens and used some of the oil from the olives for the vinegarette. Very easy to make and we will definitely make it again.

Wonderful! I have been making this often, and is a hit at pot lucks. I omit the feta and offer the it on the side, some people don’t like the cheese.

Followed the recipe to the T! Excellent recipe and full of flavour. The red onion was a bit overwhelming but the dressing neutralized the effect a tad! Thank you!
