took casings off the greek sausage so more ground up mix.... red & yellow peppers and red onion finely chopped and chickpeas coarsely chopped cooked separately then combined with meat for serving..and shreded spinach, simply wilted with the heat from the mixture. sliced grape tomatoes and feta tossed just before serving. no mint. served 1/3 pita pocket for buffet or half pitas for regular servings....as a greek taco. toppings, chopped greek olives, chopped green onion, chopped peppericini, tahini sauce, feta. big hit
