Each element of this simple but delicious recipe contributes to burgers you’ll want to make again and again, from the perfectly seasoned and shaped meat (with a dimple in the patties, so they won’t puff up on the grill), to the crunchy pile of chips that you get to squish together so the burger will fit in your mouth. Buy 85% lean ground beef to keep the burgers nice and moist, handle the meat mixture gently so the patties stay tender, and grill them just right over medium-high heat. - Preheat a grill for medium-high heat (400° to 500°F).
- Put ground beef in a medium bowl with Worcestershire sauce, salt, garlic powder, and pepper. Gently mix seasonings into beef with your fingertips, being careful not to compress or overwork the meat. Divide the mixture into 4 equal portions.
- Form each portion into a loose ball. Gently flatten each ball with your palms to form a burger about 1 inch thick and 4 inches in diameter. Set patties on a baking sheet or platter. With your thumb or the back of a spoon, make a dimple or indentation a scant 1/4 inch deep and about 1 1/2 inches wide in the center of each burger.
