- 1 Tbsp. rice wine vinegar
- 1/4 cup brown sugar
- 2 tsp. toasted sesame oil
- 1 cup mayonnaise
- 2 Tbsp. brine (kimchi)
- 1/2 cup kimchi (finely diced drained, 100g)
- 1 tsp. sugar
- 1 Tbsp. toasted sesame oil
- 1 clove garlic (grated or minced)
- 2 scallions (white and light green parts only, finely chopped, about 40g)
- 1 1/2 lb. ground beef chuck (fresh, about 80% lean)
- kosher salt
- vegetable oil (for oiling the grill)
- 2 Tbsp. toasted sesame seeds
- 4 sesame seed buns (split)
- 2 cups red cabbage (finely shredded quartered and cored)
- 1 daikon (recipe danmuji, Korean pickled, radish, prepared following the recipe but using thin rounds of daikon instead of strips)

These were incredible burgers! I made them on the stove top and they turned out amazingly delicious! The kimchi mayo is a treat by itself.
