I made a variation with what I had on hand. I used TJ’s frozen “Spicy Mexican style riced Cauliflower”. Cooked just that in the pan to make the base, next a layer of cheddar. I used ground chicken, packet of taco seasoning, and a can of Diced tomatoes with green chilies, including the liquid in the can. I skipped the cream cheese. Topped with another layer of cheddar. It definitely needs more “glue” to hold it together, but the flavor was yum!

Are used crushed tomatoes with no heat, added jalapeño peppers, with seeds removed and used rice instead of cauliflower. Everything else was the same. Excellent reviews from our guests!

Very good. The cauliflower tastes just like rice. My husband didn’t even taste the difference. Added a jalapeño for a little extra spice and a clove of garlic. So tasty. Will be making this one again!
