- 1 tsp. baking soda
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. kosher salt
- 1/2 tsp. ground ginger
- 1/4 tsp. ground nutmeg
- 1/8 tsp. ground cloves
- 1 cup pumpkin
- 2 large eggs (at room temperature)
- 1/2 cup pure maple syrup
- 1/3 cup coconut oil (melted and cooled to room temperature)
- 1/4 cup unsweetened vanilla almond milk (at room temperature, or milk of your choice)
- 1 1/2 tsp. pure vanilla extract
- turbinado sugar (for sprinkling on muffins, optional)

Fantastic! I used organic white flour. I don’t know if it made a difference, but I learned how to fold squares of parchment paper into the same tulip cups (super easy) used at my local coffee shop. I then filled them up to make 6 muffins instead of 12. With a cup of coffee, I was transported to the coffee shop at a fraction of the cost. This is a keeper.

Great recipe! I used fresh pumpkin puree, white flour (because that's what I had on hand), pumpkin spice equivalent to the individual spices, and unsweetened oat milk. I agree that it's not too sweet, so adjust as needed, but it's a nice balance if you want the healthy aspect of the recipe as it is labeled as such. I think I would likely add in chocolate chips next time, or some other crunch factor.

They were delicious! A reviewer recommended baking for just 18 minutes and that was perfect timing for me, too. If you have a sweet tooth you will want the sugar sprinkled on top. I skipped it and they were wonderful, but not as sweet as my kids like.

Tastes great!
Used butter instead of coconut oil
Put some chocolate chips in it no sugar on top

it was Yummly, I added 1/4 tsp cloves instead of 1/8 and only added 1/4tsp ginger instead of 1/2tsp

I didn’t have ground cloves so I made it without them. For me it made more than 12 muffins and they are amazing. I did add about 3/4 cup dark chocolate pieces that I broke up because I thought it wouldn’t be sweet enough but now I’m retrospect I think it was unnecessary.

Pretty tasty I cut back on the maple syrup so they weren’t too sweet but added some dried cranberries & pumpkin seeds nice crunch great with a cuppa tea!

I made these today but I used 1/3 cup butter made from olive oil instead of cocnut oil. plus I added 1/4 cup truvia brown sugar and folded in a handful of no added sugar dark chocolate..... the results---- best muffins ive ever eaten!! not dense at all- light, fluffy, sweet but not too sweet, melt in mouth goodness!!!

I added a cup of chopped pecans and topped them with the turbinado sugar. The results were perfect--just the right amount of sweetness. My favorite muffin recipe of all time!

instead of 1/2 cup of maple syrup i put 1/3 of honey. i also use slightly less sugar. Delicious!

These turned out great! Lightly sweet- perfect for healthy weekday breakfasts. The kids gobbled them up, even though I forgot to sprinkle the turbinado sugar on top before baking! 😆
