- 1 whole chicken (cut-up, you can usually find a package with 2 breasts, 2 thighs, 2 wings and 2 drumsticks)
- 6 qt. water (or enough to just cover the chicken and vegetables)
- 4 large carrots (cut into large chunks)
- 4 stalks celery (green tops included, cut into fourths)
- 1 onion (large, quartered)
- 2 cups flour (unbleached all-purpose, plus extra for rolling)
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2 Tbsp. butter (cold, cut into 1/2” pieces)
- 1 cup whole milk (scant)
- 8 cups chicken broth (or stock homemade or low-sodium store-bought)
- 4 cups chicken (cooked shredded)
- 1 large carrot (diced)
- 1/3 cup frozen peas
