Description
Juicy on the inside and crispy on the outside, these easy fish sticks are delicious and guaranteed kid-approved and adult-friendly! Dunk them in the basic homemade tartar sauce blend of creamy mayo, tangy lemon, and sour dill pickle relish. Or customize all or part of the sauce with briny capers or your favorite hot sauce. For tiny eaters, you can cut the fish sticks into smaller strips after frying. The recipe is a Yummly original created by Cooks with Soul.

- 2 lb. salmon fillets (skinless, center-cut Atlantic or king, about 1 inch thick)
- 1 1/2 tsp. kosher salt (plus more to taste)
- 2 cups panko breadcrumbs
- freshly grated lemon zest (from 1 lemon)
- 1/2 tsp. black pepper (plus more to taste)
- 1/2 cup flour
- 2 large eggs (beaten to blend)
- vegetable oil (about 2 cups, for frying)
- 3/4 cup mayonnaise
- 1/3 cup pickle relish (dill pickle relish)
- 2 tsp. chopped fresh chives
- 1 1/2 tsp. Dijon mustard
- 1 1/2 tsp. lemon juice
- lemon wedges (for serving, optional)

Directions
- Cut salmon fillets crosswise into strips about 1 inch wide. Season all over with 1 1/2 teaspoons kosher salt.
- Combine breadcrumbs, lemon zest, and ½ teaspoon pepper in a shallow bowl. Put flour in another shallow bowl, and eggs in a third.
- Dredge the salmon pieces in flour, shaking off excess. Then dip each in egg, allowing the excess to drip off, and coat with breadcrumb mixture. Set salmon aside on a plate.
