Easy to make, gone in a flash. This cake was indeed incredibly moist, though It was pretty hard on the edges after 43 minutes of baking. I used a different cream cheese frosting recipe and was very happy with the outcome.

Great / added small can of pineapple and less powdered sugar to frosting/ made gluten free with rice flour / has to bake it 15 to 20 minutes longer but it turned out great

My go to carrot cake recipe and those who doesn’t fancy carrot cake gets converted with this recipe. Cake is very moist and stay moist even after a week in the fridge. Makes a very tall 9 inch cake

This cake is super moist & the most delicious carrot cake ever!! I use chopped walnuts and no raisins but I add about 1/4 minced fresh pineapple and it’s delicious

I made this with only brown sugar (used about 10g less than the recipe) and skipped the pecans because I don’t like crunch in my cakes, but otherwise followed this one. It was AMAZING. Just the right amount of “moist” and the sugar was just right. Will definitely make this again.
